You can make your own al­mond meal from ei­ther blanched nuts or al­mond ker­nels. The flavour will be slightly more su­pe­rior if you use ker­nels. Use a cof­fee grinder or food pro­ces­sor to do this in small batches us­ing the pulse but­ton. Take care not to over-process or you will end up with a paste and not free-flow­ing meal.
