Corn with vanilla butter
MAKES BUTTER FOR 4 COBS OF CORN
One of my favourite summer foods is sweet corn. My culinary trick is to make a whipped butter with a little bit of vanilla and salt and pepper added. So easy, and the vanilla enhances the natural sweetness of the corn with no added sugar. 100-150g butter (or olive oil spread)
1/2 teaspoon vanilla
salt and freshly ground black pepper, to taste Mash together with a fork until well mixed and fluffy. Serve over hot cobs of corn – cook them on the barbecue for added smoky flavour.
