Salmon would have to be one of my favourite things to have for din­ner (or lunch) and I have it at least once a week (some­times even two nights run­ning!). I’m also a huge fan of Brus­sels sprouts (es­pe­cially when roasted). My tip is to gen­er­ously salt and pep­per the salmon and keep the Brus­sels sprouts small in size to en­sure sweet­ness.
