HONEY OAT SLICE

This is a very sim­ple ver­sion of this slice. Feel free to vary it with the ad­di­tion of sul­tanas, dried cran­ber­ries, chopped al­monds or other dried fruit, nuts or seeds.

SERVES 12 PREP AND COOK TIME 25 MIN­UTES

150g but­ter, chopped ½ cup (175g) honey 2 eggs, beaten lightly 1½ cups (135g) rolled oats 3/4 cup (110g) self-rais­ing flour 75g dark choco­late, chopped finely

1 Pre­heat oven to 180°C (160°C fan-forced). Grease and line a 22cm spring­form pan. 2 In a large mi­crowave-safe bowl, heat the but­ter and honey to­gether on HIGH POWER for 1 minute or un­til just melted. Stir in the egg, oats and flour. Spread into the pre­pared pan and bake for 20 min­utes or un­til lightly golden brown. Cool. 3 Mean­while, place the choco­late in a small mi­crowave-safe dish. Mi­crowave on MEDIUM POWER for 2 min­utes, stir­ring half­way, or un­til melted, smooth and glossy 4 Driz­zle choco­late over the slice.

Slice suit­able to freeze. Not suit­able to mi­crowave.
