Lemon, garlic and chilli crumbs

MAKES 1½ CUPS PREP AND COOK TIME 15 MINUTES

Heat 40g butter and 1 tbsp extra virgin olive oil in a medium frying pan over medium heat. Add 1 clove crushed garlic, 1 finely sliced long red chilli, 1 tsp finely grated lemon rind and 1 cup coarse sourdough breadcrumb­s; cook, stirring, until breadcrumb­s are golden and crisp.
