Salted chocolate fudge sauce with wa es and peanuts

Top chefs and home cooks alike use soy sauce in desserts, adding a unique avour that marries so well with chocolate.

SERVES 4 (MAKES 1¼ CUPS) PREP AND COOK TIME 10 MINUTES

½ cup (125ml) thickened cream

¼ cup (55g) firmly packed brown sugar

¼ cup (60ml) maple syrup

2 tablespoon­s Kikkoman Soy Sauce

¼ cup (25g) cocoa powder

20g butter

100g dark chocolate, chopped

8 warm Belgium-style waffles, vanilla icecream and chopped roasted peanuts, to serve

1 Combine cream, sugar, maple syrup, soy, cocoa and butter in a medium saucepan. Place over medium heat, whisk until sugar and butter have melted. Simmer for 2-3 minutes. Remove from heat, add chocolate and stir until smooth.

2 Serve drizzled over waffles topped with ice-cream and peanuts.

Not suitable to freeze or microwave.
