Smooth ricotta is sold in tubs in the refrigerat­ed section of most supermarke­ts. This variety of ricotta achieves a smooth, creamy topping. Use chicken stock instead of white wine, if you prefer. Store leftovers in the fridge for up to 3 days or freeze in portion-sized airtight containers for up to 3 months.
