Easy spaghetti marinara

SERVES 4 PREP + COOK TIME 25 MINUTES

This dish is so simple, requiring very little preparatio­n. The pasta and sauce are cooked together in one pot, meaning less washing up.

2 tablespoon­s extra virgin olive oil

1 medium brown onion (150g), chopped finely 2 cloves garlic, crushed

1-2 fresh long red chillies, chopped finely 2 tablespoon­s tomato paste

400g can diced tomatoes

¼ cup fresh basil leaves

1 litre (4 cups) water

500g spaghetti

750g marinara mix (see tip page 110) 2 tablespoon­s extra virgin olive oil, extra ⅓ cup small, fresh basil leaves

1 Heat oil in a large deep frying pan or saucepan; cook onion, garlic and chilli, stirring, until onion softens. Add tomato paste and cook, stirring, until combined. Add canned tomatoes and basil; cook, stirring, for 1 minute. 2 Add the water to pan, bring to boil. Add spaghetti; once spaghetti begins to soften, gently mix into the tomato mixture. Boil, uncovered, stirring to prevent spaghetti from sticking, for 4 minutes. Add marinara mix; boil, uncovered, gently stirring, for about 5 minutes or until spaghetti is tender and seafood is just cooked. Season with salt flakes and freshly ground pepper.

3 Serve bowls of spaghetti drizzled with extra oil and sprinkled with basil leaves.

Not suitable to freeze or microwave.
