Elevate pantry staples for a tasty meal
PREP + COOK TIME 15 MINUTES
2 tablespoons extra virgin olive oil, plus extra to drizzle
250g cherry tomatoes, halved 2 cloves garlic, crushed
75g packet 2-minute noodles 95g can tuna in olive oil, drained 50g baby spinach leaves finely grated lemon rind and juice, to serve
1 Heat the oil in a medium saucepan over low heat.
Add the tomatoes and garlic, season with salt and pepper and cook, stirring occasionally, for 6-8 minutes, or until the tomatoes are soft. Add the noodles (discarding the flavour sachet) and ¾ cup (180ml) boiling water; bring to a simmer and cook for 1 minute or until just tender.
2 Add the tuna and cook for 1 minute or until heated through. Toss with spinach and serve with a little lemon rind and juice, black pepper and extra oil.
