Bomboloni is best made close to serving. Lemon curd can be stored in the fridge for up to 1 week. Filled or unfilled bomboloni will keep in an airtight container for up to 2 days. Vanilla pods can be placed in a jar of sugar to make vanillafla­voured sugar; or use to stir hot chocolate or cup of warm milk. You can use 1 teaspoon vanilla extract or vanilla bean paste instead of scraping seeds from a vanilla bean, if you prefer. Use your hands to fill the ¼ cup measures of crumpet batter as it can be difficult to handle with a spoon. If you have another large frying pan and extra egg rings, cook more than one batch at a time to reduce the cooking time. Crumpets will keep in an airtight container for up to 2 days.
