Chicken burgers with cranberry onions

SERVES 4 PREP + COOK TIME 35 MINUTES

Heat an oiled large frying pan over medium heat; cook 1 thinly sliced large red onion (300g), stirring occasional­ly, for about 15 minutes or until onion is soft. Add 2 tablespoon­s red wine vinegar

and 1 tablespoon brown sugar; cook, stirring, for 5 minutes or until caramelise­d. Stir in 2 tablespoon­s cranberry sauce; remove from pan, cover to keep warm. Meanwhile, combine 500g chicken

mince and 3 finely chopped green onions in a medium bowl; season. Shape mixture into 4 patties. Cook patties in same pan, over medium-high heat, for about 5 minutes each side or until

cooked through. Transfer to a plate; cover to keep warm. Sandwich 4 halved and toasted bread rolls with oak lettuce leaves, sliced tomato, patties, sliced Swiss cheese and cranberry onions.
