Smoky chats with chilli
SERVES 4-6 PREP & COOK TIME 45 MINUTES
1kg baby potatoes, halved
6 cloves garlic, unpeeled
1 tablespoon extra virgin olive oil 2 teapoons salt flakes
1 teaspoon smoked paprika
2 long fresh chillies, halved lengthways ¼ cup finely grated parmesan cheese 1 Preheat oven to 200°C (180°C fanforced). Combine potatoes, garlic and olive oil in a small roasting pan. Season with salt flakes and sprinkle with smoked paprika. Roast potatoes for 30 minutes, turning halfway.
2 Add chillies to pan; roast for a further 10 minutes or until golden and tender. Top with parmesan.
Not suitable to freeze.
