Passionfru­it punch (non alcoholic)

SERVES 8 (MAKES 2 LITRES/8 CUPS) PREP + COOK TIME 15 MINUTES (+ REFRIGERAT­ION TIME)

Stir ¾ cup caster sugar and ¾ cup water in a small saucepan over medium heat until sugar dissolves. Bring to the boil. Pour into a heatproof jug; refrigerat­e until cold. Just before serving, combine 1 cup of the sugar

syrup, ¾ cup fresh passionfru­it pulp, ¼ cup lemon juice, 1½ cups passionfru­it soft drink and 3 cups ice in a large jug. Stir in 3 cups soda water. Serve with

lemon wedges.
