Sweet Potato and Len­til Pat­ties

Method

Pre­heat the oven to 180C. Line a bak­ing tray with bak­ing pa­per.

Place the sweet potato on the lined tray, sprin­kle with salt and pep­per and driz­zle on a lit­tle olive oil. Roast in the oven for 30 min­utes, or un­til the sweet potato is ten­der. Set aside to cool.

Trans­fer the sweet potato to a bowl and mash.

Add the lentils, lemon juice, pa­prika, cumin, cayenne pep­per, flour and co­rian­der, sprin­kle with salt and pep­per and mix thor­oughly. Shape into six pat­ties.

Driz­zle a lit­tle olive oil over the lined tray, then add the pat­ties.

Bake in the oven for 15 min­utes, flip over and bake for a fur­ther 15 min­utes, or un­til lightly browned.

Scat­ter co­rian­der leaves over your sweet potato and len­til pat­ties and serve with burger buns and yummy veges or with any salad.
