STIR-FRIED PRAWNS WITH MIXED HERBS

■ 1 each: small onion, small green cap­sicum

■ 2 Tbsp olive oil

■ 24 thawed raw prawns, de­veined and shelled

■ 1⁄4 cup chopped mixed salad herbs (eg basil, mint, co­rian­der)

■ 1⁄4 cup chopped flat-leaf pars­ley

■ finely grated rind and juice 1 large lime

■ 2-3 tsp fish sauce

■ 1 tsp brown sugar

Finely dice the onion. Halve, seed and dice the cap­sicum. Saute´ in the oil in a wok or fry­ing pan, un­til soft­ened. Add the prawns and saute´ for 1-2 min­utes, un­til pink. Add the re­main­ing in­gre­di­ents and stir-fry un­til heated through. Serve with steamed rice and a crisp salad.
