SAGANAKI WITH HONEY & CHILLI

SERVES 1 / PREPARATIO­N 5 MINUTES / COOKING 5 MINUTES

125g slice kefalograv­iera cheese 50ml good-quality honey 2 pinches Greek oregano 1 teaspoon chilli flakes juice of 1 lemon

Heat a heavy frying pan over medium-high heat and cook the cheese until golden – you won’t need any oil. Flip and cook until golden on the other side. Drizzle with honey, scatter over the oregano, chilli flakes and squeeze on some lemon juice. Serve immediatel­y in the pan.
