APRICOT VITALITY BALLS

What the judges loved about Well & Truly’s Make-at-home Vitality Bars was the freshness of the ingredient­s and the convenienc­e. The mix is packed with nuts and seeds and comes premixed in perfect portions so you can speedily make delicious, nutritious bars without needing a pantry full of packets of various seeds and nuts that can go rancid so quickly.

40g butter

½ cup condensed milk

1 x 450g pack Well & Truly Make-at-home Vitality Bars 250g ready-to-eat dried apricots

(the moist kind)

Put the butter and condensed milk in a saucepan. Heat over a medium heat, stirring constantly, and bring to just bubbling, then reduce to a simmer and cook, stirring, for 2 minutes. Add the vitality bar mix and stir through over the low heat for 3-4 minutes. Remove from the heat and cool for 10 minutes.

Chop the dried apricots very finely – this is best done in a food processor as you want it almost paste-like to help stick the balls together. Add to the cooled mix and stir well with a metal spoon to distribute the apricots evenly.

Using your hands, form the mixture into walnut-sized balls, pressing the mixture firmly together. Store in an airtight container in the fridge for up to 3 weeks.
