WHITE CHOCOLATE & PLUM ICE CREAM

PREPARATIO­N 10 MINUTES PLUS FREEZING

400g white chocolate chips

1 quantity ice cream base (see recipe page 114) plum jam (see recipe below)

Melt the chocolate in the microwave or in a metal bowl over a saucepan of simmering water. When melted, add to the ice cream base and whisk until thoroughly incorporat­ed. Place in the ice-cream churner and follow the manufactur­er’s instructio­ns. When the ice cream has churned, take out of the churner and put in a freezer-proof container. Put a generous amount of jam in the middle of the ice cream and gently mix to form swirls. You can add as much or as little as you wish. Put in the freezer until needed.
