Start with the snacks, a masterclas­s in complex simplicity and sophistica­tion with an element of surprise. Cured fish on crème fraîche with lemon verbena is just stunning, while poached meringue, roasted plum, brown sugar cream and sorrel granita makes for an elegant finish.
