WE ARE DELIGHTED to present this award to a chef who is at the top of his game and a fizzing energy bomb of creativity. As executive pastry chef at Park Hyatt Auckland, his role ranges from designing desserts for Onemata, the hotel’s sophistica­ted signature restaurant, to catering banquets and events, and overseeing the creation of the sizeable and spectacula­r selection of cakes and pastries for the hotel café, The Pantry. His vision for this work brings with it a global view that sets the stage for premium New Zealand flavour. It was as a 16-year-old apprentice at Conrad Jupiters on the Gold Coast, Australia that Callum Liddicoat set his goal to reach executive pastry chef status by the time he was 30. He achieved this at 29 and has continued the pursuit of excellence in pastry and desserts making it his life journey. This award represents not only his talent but his great passion for his art.
