SQUISITO SALMON PASTA
This simple and insanely delicious pasta dish is a doddle to prepare quickly, fresh but still hearty, it’s great eating whatever the weather. The ready to eat salmon portion is the perfect amount for two and the recipe can easily be thrown together in the time it takes to cook the pasta.
Zesty caramelised lemon is a fine accompaniment to rich, tender hot smoked salmon, and teamed with creamy Stracciatella & herbs, one can wistfully imagine being on the coast of a salt bleached Mediterranean town, crust of baguette in hand, sopping up the glorious, golden smoky flavours.
It can even be eaten at room temperature for lunch or meals on the fly, dare we mention picnics? It’s great for them too, just cook and dress the pasta in advance.
