SQUISITO SALMON PASTA

This simple and insanely delicious pasta dish is a doddle to prepare quickly, fresh but still hearty, it’s great eating whatever the weather. The ready to eat salmon portion is the perfect amount for two and the recipe can easily be thrown together in the time it takes to cook the pasta.

Zesty caramelise­d lemon is a fine accompanim­ent to rich, tender hot smoked salmon, and teamed with creamy Stracciate­lla & herbs, one can wistfully imagine being on the coast of a salt bleached Mediterran­ean town, crust of baguette in hand, sopping up the glorious, golden smoky flavours.

It can even be eaten at room temperatur­e for lunch or meals on the fly, dare we mention picnics? It’s great for them too, just cook and dress the pasta in advance.
