SOKUSEKI-ZUKE – QUICK PICKLES CARROTS WITH KOMBU & GARLIC
MAKES 200G PICKLES
200g multicoloured carrots (or orange) 1 tablespoon soy sauce
1 tablespoon mirin
1 tablespoon rice vinegar
3g dried kombu
1 garlic clove, crushed
Peel the carrots and cut into sticks. Mix them with the remaining ingredients in an airtight container. Marinate for at least 30 minutes in the refrigerator before eating.
