SOKUSEKI-ZUKE – QUICK PICKLES CARROTS WITH KOMBU & GARLIC

MAKES 200G PICKLES

200g multicolou­red carrots (or orange) 1 tablespoon soy sauce

1 tablespoon mirin

1 tablespoon rice vinegar

3g dried kombu

1 garlic clove, crushed

Peel the carrots and cut into sticks. Mix them with the remaining ingredient­s in an airtight container. Marinate for at least 30 minutes in the refrigerat­or before eating.
