Chimichurri Dress­ing

1 tea­spoon sea salt 1 ta­ble­spoon boil­ing wa­ter ½ cup tightly packed pars­ley 2 ta­ble­spoons fresh mar­jo­ram or oregano leaves ½ tea­spoon chilli flakes or more to taste 3 cloves gar­lic, crushed ⅓ cup olive oil 2 ta­ble­spoons red wine vine­gar ½ tea­spoon ground pep­per Dis­solve the salt in the boil­ing wa­ter and cool. Place the herbs, chilli flakes, gar­lic and the oil in a food pro­ces­sor and blend un­til smooth. Tip into a bowl and whisk in the vine­gar, pep­per and salt wa­ter. Makes ¾ cup
