OVEN-SMOKED SALMON FILLET

This recipe is absolutely delicious. The combinatio­n of a very low shelf position and the powerful Classic Bake function enables the roasting dish to be transforme­d into a fantastic smoker. For best results make sure the oven is preheated and don’t be tempted to open the oven in the first 8 minutes.

2 cups salt 1 cup brown sugar 1 whole salmon fillet ¼ cup of wood chips (we used alder)

Combine the salt and sugar. Place salmon in a dish and pack the mixture on top. Cover with plastic wrap and refrigerat­e overnight.

Preheat oven to 250°C on Classic Bake with the rack on the bottom level.

Rinse the salmon, pat dry and place on a wire rack to dry for an hour.

Sprinkle the wood chips across the bottom of the roasting dish.

Place the salmon on to a splatter grid or grill rack and place this into a roasting dish. Cover the dish tightly with tin foil. Place the dish into the oven and cook for 8–12 minutes, until the salmon is cooked through. Serve hot with new potatoes or cool and pair with brown bread and capers.
