Car­rick Wines from Ban­nock­burn won Best Or­ganic White Wine with its Car­rick Ban­nock­burn Ries­ling Cen­tral Otago 2017, and Best Or­ganic Red Wine, with the Pinot Noir Cen­tral Otago 2015. We ask wine­maker Fran­cis Hutt a few choice ques­tions.

WHAT IS AN OR­GANIC WINE?

The ben­e­fits for the con­sumer of cer­ti­fied or­ganic wines are fewer chem­i­cal ad­di­tives and preser­va­tives, and gen­er­ally less pro­cess­ing. In a sin­gle vine­yard sit­u­a­tion the wines be­come a true rep­re­sen­ta­tion of their tūran­gawae­wae, their sense of place.

Pinot noir: fresh field mush­room risotto; bar­be­cued eel with fresh veg and whipped char­coal smoked but­ter on whole­grain rye. Ries­ling: char­cu­terie with fresh-cut pear and a bowl of pan-fried peanuts.
