Pair the smoky pork belly and spicy jam with the rich and deeply malty Raindogs Valkyrie Where Is My Mind
Eisbock 330ml ($10). Brewer Wendy Roigard has created a strong, malty lager with late hopping and some lactoseinduced sweetness, and then frozen it. Removing the ice (or Eis) concentrated the flavours beautifully – and lordy is it lovely with these excellent pork burgers.
