Pair the smoky pork belly and spicy jam with the rich and deeply malty Rain­dogs Valkyrie Where Is My Mind

Eis­bock 330ml ($10). Brewer Wendy Roigard has cre­ated a strong, malty lager with late hop­ping and some lac­to­sein­duced sweet­ness, and then frozen it. Re­mov­ing the ice (or Eis) con­cen­trated the flavours beau­ti­fully – and lordy is it lovely with th­ese ex­cel­lent pork burg­ers.
