PINTXO – GRILLED CHORIZO WITH CARAMELISED ONION AND MUSTARD AIOLI
200g fresh chorizo sausage 5 slices baguette bread CARAMELISED ONION 3 onions, finely sliced 100ml canola oil 100g brown sugar 100g sherry vinegar MUSTARD AIOLI 500ml canola oil 1 garlic clove 30g wholegrain mustard 125ml milk 1 tsp salt 1 Preheat the oven to 180°C. Place chorizo in the oven for 18 minutes, or until cooked. 2 Meanwhile, make the Caramelised onions and Mustard aioli (see below). 3 Toast the baguette slices in the oven for 2 minutes until the crust is crunchy. 4 Top the toasted bread with Caramelised onion, a piece of sliced chorizo and a drizzle of Mustard aioli.
Caramelised onions Place onions in a pan with the oil over a low to medium heat. Cook until soft, then add sugar and sherry vinegar, stirring occasionally, until onions brown.
Mustard aioli Place garlic, mustard, milk and salt in a blender, mix well; add oil slowly until it reaches a mayonnaise consistency.
