PIN­TXO – GRILLED CHORIZO WITH CARAMELISED ONION AND MUS­TARD AIOLI

200g fresh chorizo sausage 5 slices baguette bread CARAMELISED ONION 3 onions, finely sliced 100ml canola oil 100g brown sugar 100g sherry vine­gar MUS­TARD AIOLI 500ml canola oil 1 gar­lic clove 30g whole­grain mus­tard 125ml milk 1 tsp salt 1 Pre­heat the oven to 180°C. Place chorizo in the oven for 18 min­utes, or un­til cooked. 2 Mean­while, make the Caramelised onions and Mus­tard aioli (see be­low). 3 Toast the baguette slices in the oven for 2 min­utes un­til the crust is crunchy. 4 Top the toasted bread with Caramelised onion, a piece of sliced chorizo and a driz­zle of Mus­tard aioli.

Caramelised onions Place onions in a pan with the oil over a low to medium heat. Cook un­til soft, then add sugar and sherry vine­gar, stir­ring oc­ca­sion­ally, un­til onions brown.

Mus­tard aioli Place gar­lic, mus­tard, milk and salt in a blender, mix well; add oil slowly un­til it reaches a may­on­naise con­sis­tency.
