Healthy grazing: Green goodness summer wraps

Who loves rice paper wraps? Me! I am such a big fan because they are healthy, nutritious and you can load them up with all your favourite green produce. They are also very easy to make; once you get the rolling technique down, you can roll them out in no time, making them perfect to serve for a light lunch/ dinner or to take on a summer picnic. These rice paper wraps are fresh, crispy and loaded with lots of my favourite green vegetables.
You could also add other green vegetables of your choice such as asparagus, zucchini, broccoli and spinach. Or, if you wish to make them more colourful, add other veges like carrots and capsicums . I serve these with with my green goddess mint dipping sauce and an array of fresh-cut summer fruits.
