Avo on toast with balsamic tomatoes and bacon

1 tbsp balsamic vinegar
½ tsp honey
1 medium tomato
¼ tsp olive oil
1 rasher lean bacon (eg shoulder or middle eye), cut in half
2 thin slices toasted grainy bread Flesh of ¼ firm ripe avocado, sliced Chopped basil or coriander, to garnish
1 Combine the balsamic vinegar and honey in a bowl. Cut the tomato into 4 even slices and toss in the balsamic mixture. Set aside.
2 Heat the olive oil in a small frying pan and cook the bacon for 2–3 minutes each side until crisp, remove from the pan, drain on paper towels and chop. Add the tomato slices to the pan and sear on each side until coloured. Top the toast with avocado slices, balsamic tomatoes, a pinch of flaky sea salt and the bacon. Garnish with basil or coriander.
