Avo on toast with bal­samic toma­toes and ba­con

1 tbsp bal­samic vine­gar

½ tsp honey

1 medium tomato

¼ tsp olive oil

1 rasher lean ba­con (eg shoul­der or mid­dle eye), cut in half

2 thin slices toasted grainy bread Flesh of ¼ firm ripe avo­cado, sliced Chopped basil or co­rian­der, to gar­nish

1 Com­bine the bal­samic vine­gar and honey in a bowl. Cut the tomato into 4 even slices and toss in the bal­samic mix­ture. Set aside.

2 Heat the olive oil in a small fry­ing pan and cook the ba­con for 2–3 min­utes each side un­til crisp, re­move from the pan, drain on pa­per tow­els and chop. Add the tomato slices to the pan and sear on each side un­til coloured. Top the toast with avo­cado slices, bal­samic toma­toes, a pinch of flaky sea salt and the ba­con. Gar­nish with basil or co­rian­der.
