Avo and egg on toast with cur­ried sea salt

Good pinch each of curry pow­der, car­away or cumin seeds and flaky sea salt

Flesh of ¼ firm ripe avo­cado, sliced 2 thin slices toasted grainy bread

1 soft or hard−boiled free−range egg, sliced

Small hand­ful of wa­ter­cress, mi­cro­greens or rocket

1 Com­bine the curry pow­der, seeds and salt in a small bowl.

2 Top the toast with avo­cado slices and the boiled egg. Sprin­kle with the cur­ried salt sea­son­ing and gar­nish with the greens.
