Avo and egg on toast with curried sea salt
» MAKES 1 PORTION » PREPARATION 5 MINUTES
Good pinch each of curry powder, caraway or cumin seeds and flaky sea salt
Flesh of ¼ firm ripe avocado, sliced 2 thin slices toasted grainy bread
1 soft or hard−boiled free−range egg, sliced
Small handful of watercress, microgreens or rocket
1 Combine the curry powder, seeds and salt in a small bowl.
2 Top the toast with avocado slices and the boiled egg. Sprinkle with the curried salt seasoning and garnish with the greens.
