Choco­late berry bliss balls 11/4 cups wal­nuts

1 cup al­monds

1 cup pit­ted dates

1 cup co­conut flakes

2 tbsp raw ca­cao pow­der

1-2 tbsp ex­tra vir­gin co­conut oil

1 cup freeze-dried rasp­ber­ries 1/2 cup choco­late chips

1 tbsp freeze-dried rasp­berry pow­der

100g dark choco­late, for coat­ing

1 Place all in­gre­di­ents into a food pro­ces­sor ex­cept the freeze-dried rasp­ber­ries and choco­late chips, and process un­til the mix­ture starts to come to­gether. If it’s too dry, add a ta­ble­spoon of co­conut oil.

2 Add in the choco­late chips and freeze-dried rasp­ber­ries and pulse a few times to com­bine.

3 Take a hand­ful of the mix­ture and roll into balls, then put in the fridge to set while you melt the choco­late.

4 To melt the choco­late, place a heat-proof bowl over a pot of boil­ing wa­ter (or use a dou­ble boiler). Put the choco­late in the bowl and melt slowly.

5 Dip the choco­late berry bliss balls in the choco­late and coat fully. Place on a plate lined with bak­ing pa­per and put in the freezer to set for at least 20 min­utes or un­til the choco­late is hard.

6 Re­move from the freezer and driz­zle more choco­late over the top, then sprin­kle with a lit­tle freeze-dried rasp­berry pow­der.

7 Place in the fridge to fully set.
