IT CAN BE A SEASON OF OVERINDULGENCE, BUT NOT SO WITH THESE HEALTHY AND DELICIOUS GIFTS
Chocolate berry bliss balls 11/4 cups walnuts
1 cup almonds
1 cup pitted dates
1 cup coconut flakes
2 tbsp raw cacao powder
1-2 tbsp extra virgin coconut oil
1 cup freeze-dried raspberries 1/2 cup chocolate chips
1 tbsp freeze-dried raspberry powder
100g dark chocolate, for coating
1 Place all ingredients into a food processor except the freeze-dried raspberries and chocolate chips, and process until the mixture starts to come together. If it’s too dry, add a tablespoon of coconut oil.
2 Add in the chocolate chips and freeze-dried raspberries and pulse a few times to combine.
3 Take a handful of the mixture and roll into balls, then put in the fridge to set while you melt the chocolate.
4 To melt the chocolate, place a heat-proof bowl over a pot of boiling water (or use a double boiler). Put the chocolate in the bowl and melt slowly.
5 Dip the chocolate berry bliss balls in the chocolate and coat fully. Place on a plate lined with baking paper and put in the freezer to set for at least 20 minutes or until the chocolate is hard.
6 Remove from the freezer and drizzle more chocolate over the top, then sprinkle with a little freeze-dried raspberry powder.
7 Place in the fridge to fully set.
