Christ­mas gra­nola

3 cups jumbo rolled oats

1 cup al­monds, roughly chopped

1 cup wal­nuts, roughly chopped

1 cup pis­ta­chios, roughly chopped 1/2 cup pump­kin seeds

1/2 cup sun­flower seeds

1 tsp ground clove

1 tsp ground nut­meg

1 tsp ground cin­na­mon

1 tsp mixed spice

Pinch of Hi­malayan pink salt

⅓ cup ex­tra vir­gin co­conut oil

¼ cup co­conut nec­tar syrup

1/2 tsp pure vanilla bean paste

1 cup co­conut flakes

1/2 cup choco­late chips or roughly chopped dark choco­late

1 cup freeze-dried plums

1 In a bowl, add the rolled oats, chopped nuts, seeds, spices and salt. Stir to com­bine.

2 Place a small pot on the stove on a low heat and melt the co­conut oil, co­conut nec­tar syrup and vanilla paste.

3 Pour this over the nut and seeds, and stir to com­bine.

4 Spread the mix­ture over a lined bak­ing tray and bake at 170°C for 12-15 min­utes.

5 Af­ter about six min­utes, give the mix­ture a stir to en­sure it bakes evenly, keep­ing an eye on it so it doesn’t get too golden or burn.

6 Once the mix­ture is lightly golden re­move from the oven and al­low to cool fully for at least 40 min­utes be­fore mix­ing through the co­conut flakes, choco­late chips and freeze-dried plums.

7 Once fully com­bined, place into your Christ­mas jars.
