3 cups jumbo rolled oats
1 cup almonds, roughly chopped
1 cup walnuts, roughly chopped
1 cup pistachios, roughly chopped 1/2 cup pumpkin seeds
1/2 cup sunflower seeds
1 tsp ground clove
1 tsp ground nutmeg
1 tsp ground cinnamon
1 tsp mixed spice
Pinch of Himalayan pink salt
⅓ cup extra virgin coconut oil
¼ cup coconut nectar syrup
1/2 tsp pure vanilla bean paste
1 cup coconut flakes
1/2 cup chocolate chips or roughly chopped dark chocolate
1 cup freeze-dried plums
1 In a bowl, add the rolled oats, chopped nuts, seeds, spices and salt. Stir to combine.
2 Place a small pot on the stove on a low heat and melt the coconut oil, coconut nectar syrup and vanilla paste.
3 Pour this over the nut and seeds, and stir to combine.
4 Spread the mixture over a lined baking tray and bake at 170°C for 12-15 minutes.
5 After about six minutes, give the mixture a stir to ensure it bakes evenly, keeping an eye on it so it doesn’t get too golden or burn.
6 Once the mixture is lightly golden remove from the oven and allow to cool fully for at least 40 minutes before mixing through the coconut flakes, chocolate chips and freeze-dried plums.
7 Once fully combined, place into your Christmas jars.
