Berry bowl with chia seeds

20g coarsely ground coconut
20g shredded coconut, unsweetened 20g almond flakes
35g chia seeds
120ml coconut milk or heavy whipping cream
240ml water or unsweetened almond milk, hot or cold
1 tsp vanilla extract
2 tbsp healthy low-carb sweetener 5-10 drops of stevia extract
100g blackberries, blueberries or raspberries
1 Lightly toast the coconut and almonds in a pan for 2-3 minutes for added flavour.
2 Meanwhile, place the chia seeds in a bowl. Stir in the coconut milk and water – hot or cold, as you wish. Then add the vanilla extract and, depending on taste, sweetener.
3 Combine everything well and leave to stand for 5-10 minutes. In the case of cold liquids, it’s better to wait
10-15 minutes. This will allow the chia seeds to properly swell.
4 Pour the breakfast mixture into two small bowls, and garnish with fresh berries, coconut and almonds.
