Berry bowl with chia seeds

20g coarsely ground co­conut

20g shred­ded co­conut, unsweet­ened 20g al­mond flakes

35g chia seeds

120ml co­conut milk or heavy whip­ping cream

240ml wa­ter or unsweet­ened al­mond milk, hot or cold

1 tsp vanilla ex­tract

2 tbsp healthy low-carb sweet­ener 5-10 drops of ste­via ex­tract

100g black­ber­ries, blue­ber­ries or rasp­ber­ries

1 Lightly toast the co­conut and al­monds in a pan for 2-3 min­utes for added flavour.

2 Mean­while, place the chia seeds in a bowl. Stir in the co­conut milk and wa­ter – hot or cold, as you wish. Then add the vanilla ex­tract and, depend­ing on taste, sweet­ener.

3 Com­bine ev­ery­thing well and leave to stand for 5-10 min­utes. In the case of cold liq­uids, it’s bet­ter to wait

10-15 min­utes. This will al­low the chia seeds to prop­erly swell.

4 Pour the break­fast mix­ture into two small bowls, and gar­nish with fresh berries, co­conut and al­monds.
