Green Goddess Dressing
This is a creamy, tasty little bit of heaven. So much more than just a dressing, it can be used as a dip for crudités, and as a sauce for a tart or quiche, roast veg or meat or a pan-fried piece of fish – it goes with almost anything. Gluten-free
Makes 1 cup
½ cup of my Herby Mayo 1 avocado
1 fat clove garlic a few basil leaves small bunch of parsley, leaves only small bunch of dill juice of ½ lemon sea salt and freshly ground pepper
Place all of the ingredients in a food processor and blend until smooth. Taste and add salt and pepper to your liking. Serve a dollop on the side of your salad. This dressing will keep for several days in an airtight container in the fridge.
