Is there a special way to fry green tomatoes?

It’s traditiona­l to give them a crisp coating of flour, egg and crumbs or polenta (cornmeal) before shallow-frying in hot oil or fat. If possible choose green tomatoes that are starting to turn from bright green and rock solid to a slightly lighter green, when the flavour becomes more tangy than sour. Slice the tomatoes about 1cm thick, and add a pinch of Cajun seasoning to the flour if you like. Once cooked drain on kitchen paper and serve asap.

How long does bacon keep once the packet has been opened?

It should be safe to eat for up to 8 days, so long as the bacon is within its use-by date and has been stored loosely covered in the coolest part of your fridge. If you don’t intend using it all within this time, roll up individual rashers, place them in a plastic bag and freeze _ plan to use within a month. Note that once a vacuum pack is opened, the bacon will start to lose its pink colour.
