Fresh Life Honey Coconut Macadamia Granola
2 cups Fresh Life macadamia nuts, roughly chopped
1 cup Fresh Life pumpkin seeds 1 cup Fresh Life slivered almonds 1 cup Fresh Life coconut chips 3 Tbsp honey
1⁄2 cup Fresh Life black chia seeds
2⁄3 cup Fresh Life dried blueberries
1⁄2 cup Fresh Life whole cranberries
2 cups oats
Preheat oven to 180C bake. In a large non-stick frying pan, dry roast (using no oil or butter) the pumpkin seeds, almonds and macadamia nuts over a low heat until pumpkin seeds begin to pop. Add oats and coconut, stirring constantly until oats have slightly browned.
Put all ingredients from frying pan into an oven tray lined with baking paper. Drizzle over honey and mix well to combine.
Place in oven for 10-15 minutes, or until mixture is a light golden brown. Check and stir well every 5 minutes to ensure the mixture doesn’t burn.
Remove from oven and stir through chia seeds and dried fruit.
Serve with fruit, milk and/or a tablespoon of yoghurt if desired — or just snack on it by the handful!
