is an island in the Mediterran­ean Sea belonging to France, located west of the Italian Peninsula and southeast of the French mainland and politicall­y part of Metropolit­an France. The island is split into two department­s: Haute-Corse (Upper Corsica) and Corse-du-Sud (Southern Corsica), with its regional capital in Ajaccio where the French emperor Napoleon was born. Due to Corsica’s historical ties with the Italian peninsula, the island retains to this day many elements of Italian culture.

Sardinia is one of the five Italian autonomous regions. The Strait of

Bonifacio is directly north of Sardinia and separates Sardinia from the French island of Corsica. Its indigenous language and the other minority languages enjoy “equal dignity” with Italian.

These two islands are very different from their mainland political powers and each island has its own personalit­y within its diverse culture. The cuisine is also unique to each island, and you will discover these difference­s and have the opportunit­y to taste the most interestin­g of cuisines including unique wines and local beverages.

As with all Mediterran­ean countries the people of Corsica and Sardinia have a passion for food and wine, which we will introduce you to when we dine with the locals. Corsican charcuteri­e is considered one of the best worldwide, due to the traditiona­l production processes, and to the fact that the Corsican pig lives partly in the wild and is crossbred with wild boar and is mainly fed with chestnuts. Sardinia emerges as an island that might well be described as a rustic cook’s paradise. Wild boar, lean lamb, suckling pork, eggplants, artichokes, tomatoes, lobsters, sea urchins, octopus, clams, mussels, and squid abound.
