■ 1 each: small onion, small green cap­sicum

■ 2Tbsp olive oil

■ 24thawe­draw­prawns, de­veinedand­shelled

■ 1⁄4cup chopped­mixed­salad herbs (eg basil, mint, co­rian­der)

■ 1⁄4cup chopped­flat-leaf pars­ley

■ finely grated rin­dand­juice 1 large lime

■ 2-3 tsp fish sauce

■ 1 tsp­brown­sugar

Finely dice the onion. Halve, seed and dice the cap­sicum. Saute´ inthe oil in awok or fry­ing pan, un­til soft­ened. Ad­dthe prawns and saute´ for 1-2 min­utes, un­til pink. Ad­dthe re­main­ing in­gre­di­ents and stir-fry un­til heated through. Serve with steamed rice and a crisp salad.
