TURKEY BURGERS WITH SPECIAL BURGER SAUCE

Burger sauce is always used in this house, and if Hester doesn’t hide the bottle half of it will be gone in one sitting! So it was only fitting to make a cleaner version for our turkey burgers.

This is a low-fat alternativ­e burger, swapping red meat for leaner white meat and an oily sauce for a thicker, chutney-style burger sauce with the signature gherkin punch! This recipe makes more burger sauce than you will need, but any leftovers can be kept in an airtight container in the fridge for several days.

Ingredient­s

To serve:

■ 5 brioche buns

■ 80g gem lettuce, sliced

■ 50g sliced gherkins

■ 3 salad tomatoes, sliced

For the burger patties:

■ 500g turkey mince

■ 1 red onion, finely diced

■ 3 spring onions, finely chopped

■ 1/2 tsp garlic powder

■ 1 tsp onion powder

■ 15g/1/2 bunch fresh parsley, finely chopped

■ 1 egg

■ 30g panko breadcrumb­s

■ sea salt and freshly ground black pepper

■ spray light oil for cooking For the burger sauce:

■ 1 shallot, finely chopped

■ 200g pickled gherkins

■ 1/4 tsp mustard powder

■ 1/2 tsp ground paprika

■ 1/2 tsp tomato puree

■ 1/2 tsp onion powder

■ 1/4 tsp garlic powder

■ 1 Tbsp wholegrain mustard

■ 1 tsp turmeric

■ 2 tbsp mirin

■ 2 tbsp gherkin water

■ 1 Tbsp zero-calorie granulated white sugar replacer

■ 3 tbsp Lighter than light mayonnaise

Method

In a mixing bowl, knead together the burger patty ingredient­s along with a good pinch of salt and pepper, and shape the mixture into five patties, each about the size of your palm. Heat a large frying pan over a medium heat and cover the base with spray light oil. Fry the burger patties for 4 — 5 minutes on each side until golden brown and cooked through.

To make the burger sauce, lightly fry the shallot then place in a blender with the remainder of the burger sauce ingredient­s and blitz until smooth and runny.

Build your burger by placing the lettuce on the base of the brioche bun, followed by the cooked patty, then layers of gherkin and tomato. Drizzle with the burger sauce and finally close the burger with the brioche top.
