Summer is a wonderful time to make refreshing teas, cordials and tonics with leaves and flowers from the garden. Lemon balm, lemon verbena, bergamot, chamomile and mint all easily infuse and steep to make delicious drinks.

Cordials are an effective way to use up surplus fruit, such as lemons, rhubarb and limes. These tasty tonics store best in a cool dark space, and any excess can be frozen into ice cubes.
