SMOKED SALMON PLATTER

Ingredient­s (Serves 4–6)

• 300–400g smoked salmon

• 50g baby salad greens

• 120g dried figs

• 1 large (200g) pear

• ½ (100g) telegraph cucumber

• 20g Gruyère cheese (Swiss cheese)

• fresh herb leaves (garnish)

dressing

2 Tbsp extra virgin olive oil 2 Tbsp lemon juice

Feta Cream

• 150g feta cheese, roughly chopped

• ⅔ cup plain Greek-style yoghurt

• ⅓ cup cream cheese

• ¼ tsp nutmeg, freshly ground

• 2 handfuls fresh herb leaves (chives, dill, French tarragon, mint, oregano or thyme)
