Breakfast Cookies
ingredients
• 1 cup blueberries
• 2 bananas, mashed
• 2 cups rolled oats
• ½ cup nuts, chopped
• 1 tsp cinnamon
• ¼ cup pumpkin seeds
• ⅓ cup honey or maple syrup
• ½ cup nut butter (or 115g butter, melted)
• 1 Tbsp coconut oil, melted
Method
1. Preheat oven to 180°C and line a baking tray with baking paper.
2. Place all ingredients together in a medium-sized bowl and mix well to combine.
3. Scoop 1 Tbsp of the cookie mixture onto your tray and repeat.
4. Bake in the oven for 20 minutes until golden.
