Alison shares an excerpt from the February 1910 issue of New Zealand Farmer Magazine about ‘earthing-up’ celery.

‘As your celery plants advance in growth, they should be earthed-up. The soil placed against the plants causes the stems to blanch and stops them from becoming bitter, while also holding them upright in the soil. Indeed, the added soil can reduce some moisture from getting to the roots so be sure to make holes on either side of the earthed-up plants to apply water to the roots as required.’
