Choc Chunk GF Cookies with Hemp Seed Sprinkle

MAKES 12 PREP 10 mins COOKING 15 mins

¾ cup (100 g) sunflower seeds

150 g dark chocolate, chopped into

chunks

¼ cup hemp flour

11/3 cups (200 g) gluten-free

plain flour

1 tsp baking powder

¼ 1 egg tsp salt

60 g butter, melted

1 tsp vanilla extract

½ cup (125 ml) pure maple syrup

2 tbsp hemp seeds

Preheat oven to 180°C. Grease and line two baking trays with baking paper. Combine seeds, chocolate chunks, flours, baking powder and salt in a bowl. Add egg, butter, vanilla and maple syrup and mix to form a dough. Chill for 20 minutes to firm up. Divide mixture into 12 then roll with wet hands into balls. Transfer to trays and press down to form 1 cm thick rounds. Sprinkle over hemp seeds and bake for 15 minutes or until golden. Cool on trays and enjoy!
