MY ABSOLUTE FAVOURITE BIRTHDAY CAKE & WHY

As a kid, carrot cake was one of my favourite cakes ... I would order it any chance I got when visiting a café. The recipe on page 105 is unique in that it uses gluten-free flour and almond meal so I didn’t get left with that bloated feeling that plain-white-flour based cakes sometimes give. The orange marmalade gives it a nice twist to what I think may become a new family favourite. The cream cheese icing never disappoint­s!
