There are few places in the world where you can pull off a main road and get to feed freshwater salmon, then sit down and savour the freshly caught fish cooked to perfection. But if you’re travelling in the South Island and stop on the outskirts of the town of Twizel, you can do just that.

High Country Salmon is the baby of Margaret and the late Richard Logan. It offers visitors this unusual experience and the opportunit­y to buy some of the freshwater Chinook salmon that thrive in the icy alpine waters of the surroundin­g Mackenzie High Country canals.

“We were among the pioneers farming freshwater salmon in the Mackenzie Country,” says Margaret Logan. “Half the 200 tonnes we produce a year is sold through our shop, and we also sell online and to restaurant­s around the country. The beauty is that people can dine here on fish that has just been caught and we deliver to customers the next day. That’s our point of difference – our fish is just so fresh.”
