This is the time of year when you get to really express your creativity in the kitchen and create some wonderful dishes that your family and friends will love, and to all come together in the festive spirit.

We imagined this year that you could be spending a little more time at home and in the comfort of your kitchen, so we have created a perfect Christmas fruit mince that you can use in many different recipes. It’s great for whipping up treats for visitors, as a foodie gift or in a festive dessert when you’re asked to ‘bring a plate’ to a party. My family has requested the cover recipe be made, having seen the photo of the Fruit Mince & Pistachio Brioche Wreath. It’s simply delicious and guaranteed to be a real crowd pleaser.

This year, I have also noticed that many people are embracing a slightly healthier diet and I have enjoyed including more plant-based protein recipes for Christmas Day. The inclusion of nuts and seeds in our banquet of vegetarian cooking provides plenty of food for thought.

For me, Christmas Day lunch or dinner is always about indulgence, and a chance to prepare family favourites that are always appreciate­d. This year, we have created a range of

rolled and stuffed roasts that I believe could become new family favourites, with lovely flavour combinatio­ns that give the meat an extra dimension and look delicious when sliced.

Having had a little more time to spend in the kitchen than usual this year, we have included a range of baking to extend your repertoire. There are festive cakes that may take you out of your comfort zone, but will be well worth the effort as you explore some wonderful new flavour combinatio­ns.

I hope you enjoy these recipes that have come from many months of trialling and testing from my home to yours. It’s time to get in the kitchen, roll up your sleeves, tie on your apron and get cooking for Christmas. Enjoy this time with your family and friends.
