Roasted Grapes with Brioche

Makes approx. 12 pieces DOUGH

150g butter 500g flour

20g fresh yeast

1 tsp sugar 180ml lukewarm milk 4 egg yolks

ROASTED GRAPES

500g seedless grapes 5 tbsp oil

2 tbsp cane sugar

5 tbsp balsamic vinegar 2 tsp thyme leaves Soft cheese, to serve

For the brioche, melt the butter in a pot. Leave to cool until lukewarm. Place the flour in a bowl. Make a well in the centre. Crumble the yeast and stir together with the sugar and lukewarm milk. Pour into the well. Sprinkle some flour on top and leave to rise for 15 minutes.

Add the butter, 3 of the yolks and a good pinch of salt to the yeast mix. Using a hand mixer with a dough hook, mix into a smooth dough. Cover and leave to rest in a warm place for about 1 hour until the dough has doubled in size. In the meantime, first grease 12 brioche or cupcake moulds (6cm across) with butter, then dust with flour. Knead the dough vigorously one more time then divide into 12 equal parts. Shape into balls. Tear ¼ of the dough almost off each ball, twist into a smaller ball, then press back into the dough. Place into moulds, cover, and rest for 30 minutes.

Pre-heat the oven to 200°C (180°C fan-forced). Whisk the remaining egg yolk and brush the dough with it. Bake for approx. 20 minutes on the second shelf from the bottom until golden brown. Leave in the moulds to cool for approximat­ely. 10 minutes, then remove and allow to cool on a wire rack.

For the roasted grapes, pre-heat the oven to 220°C (200°C fan-forced). Wash the grapes and pat dry. Tear off the stems and divide into smaller segments. Mix with the oil in a bowl. Line a baking tray with baking parchment and spread the grapes on top. Bake for 15 minutes on the middle shelf. Sprinkle with sugar, balsamic vinegar and thyme leaves and bake for 5 more minutes. Remove the grapes from the oven and season with salt and pepper. Serve either warm or cooled, with brioche and cheese.
