American single malt brand Westward has launched a world-first sourdough whiskey in Australia. A collaborat­ion with award-winning Portland-based baker Ken Forkish, the spirit is delicious and very rare. It is made from scratch using two-row malted barley and Forkish’s sourdough levain with a blend of wild yeast cultures. I like my whisky neat for the first few sips, then I add a single small cube of ice to add a light chill and help release subtlety and more flavour as the ice melts.
