Hot honey is the latest food trend taking over in 2021. The uniquely sweet and spicy condiment has been popularise­d in the United States and seems to be heading across the shores, with chefs and foodies from around the world picking up on this spicy trend. It’s used on all sorts of dishes, from a topping on pizza to a drizzle on waffles. The basis of hot honey is simple. Much like infused oil, you can make it by mixing chillies in honey over the stove on a low heat for a few minutes, then letting the mixture cool to let the spicy flavours mingle with the sweet honey. Some people choose to strain the chillies out of the mixture so you’re left with just the smooth liquid. Don’t be afraid to test different combinatio­ns, like habanero peppers and serrano chillies. If you prefer not to make it yourself, there are also a number of local hot honey producers, such as Australia’s ShortHive Chilli Honey and Al’s Hot Honey Sauce from NZ company Al’s Laboratory. Other delicious ways to try this spicy treat include drizzled on scrambled eggs, paired with charcuteri­e or shaken into a cocktail.
